Make-Ahead Sausage & Sourdough Egg Bake
Prep at night. Bake in the morning. Enjoy your life.
This dish quietly does all the work for you. And since it already includes bread, meat, and eggs, it’s a complete breakfast on its own.
Ingredients:
- 6 cups torn sourdough bread
- 1 lb cooked breakfast sausage
- 1 cup shredded cheese
- 8 eggs
- 2 cups milk
- Salt & pepper
How to make it:
- Layer the bread, sausage, and cheese in a greased baking dish.
- Whisk together eggs, milk, and seasonings; pour over the top.
- Cover and refrigerate overnight.
- Bake at 350°F for 35–40 minutes until puffed and golden.
You do not need to pull it out of the refrigerator to get to room temperature.
It smells like comfort and tastes like you spent an hour cooking… but you didn’t.
Pick Your Sweet: Gingerbread Pancakes or Cranberry–Orange Quick Bread
A little sweetness is optional, but a nice treat if you want it.
Because the egg bake already includes bread, you don’t need both of these. Choose whichever fits the morning and the people at your table.
Option A: Gingerbread Pancakes
Perfect for families, grandkids, or anyone who believes breakfast should smell like a holiday candle.
Quick version:
Add to your favorite buttermilk pancake mix for four or six people:
- 1 tbsp molasses
- ½ tsp cinnamon
- ½ tsp ginger
- ¼ tsp nutmeg
Serve with butter and warm maple syrup. My wife always likes to add blueberries on top which adds both color and flavor.
You can do these from scratch but why bother. We are making things simpler.

Add-ins:
- 1 cup fresh or frozen cranberries (halved if large)
- Optional: ½ cup chopped nuts (walnuts or pecans work well)
Instructions (Simple & Reliable)
- Preheat oven to 350°F. Grease a loaf pan or line with parchment.
- In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange zest.
- In a separate bowl, mix the orange juice, oil, egg, and vanilla.
- Pour the wet ingredients into the dry and stir gently until just combined.
- Fold in the cranberries (and nuts, if using).
- Pour into the loaf pan and smooth the top.
- Bake 50–60 minutes, or until a toothpick comes out clean.
- Cool at least 20 minutes before slicing.
Beautiful, bright, and excellent with coffee.
Either choice is great. Both are optional. Keep it simple.

Simmer on the stove with:
